This Cabernet sings cool climate!

Tasting note: Roasted bell peppers, fennel and bergamot aromatics. Fine grained tannins, rich acidity, elegant with a juicy boysenberry finish.

Winemaking: Open tank ferment, hand plunged and matured in old French barriques for sixteen months. Naturally settling in tank for six months (unfiltered and unfined), before being racked and bottled.

The 2022 growing season was cool. We had delayed bud burst by about 3 weeks and not many days in Summer over 25 degrees. A very good example of the cool climate Orange, NSW, is known for. The cool climate helps to maintain the natural fruit acid in the grapes allowing us to not have to add acid which we find helps for a more smooth tasting wine. In saying this, it was a hard year to get our baumé (grape sugars) high enough in our “fuller” style reds such as Cabernet Sauvignon. Basically, it took a lot longer and with the wait we started to loose yield from weather, birds even bees… but we got there in the end and through care, love and patience this wine has aged beautifully.
